Cucumber Rice

Cucumbers are very good for health during summers specially.Kids will enjoy eating this food. Here goes the yummy Qucumber rice recipe..

Ingredients:

1. English Cucumbers -1
2. Onions - 1 small
3. Green chillies
4. Garam Masala - 1 tsp
5. Rasam pd - 1 tsp
6. Jerra pd - 1/4 tsp
7. oil
8. Mustard
9. Jerra
10.urad dal
11.Channa dal
12. dry coconut - 1/2 cup
13. peanut pd - 3 tbsp
14. Rice -1 cup

Preparation:
1. In a bowl add rice and 2 cups of water and cook in cooker for 3 whistles
2. Keep a pan on stove and add oil, once oil gets heated add channa dal, urad dal, mustard, jerra, curry leaves.
3. Once they start to splitter add green chillies and chopped onions and saute till they turn tender.
4. Now add chopped cucumbers and saute for few minutes till they become soft.
5. Now add turmeric pd, garam masala, jerra pd, rasam pd and saute for 1min
6. Add coconut pd and peanut pd and saute for 1 min
7. Add pre cooked rice and salt and mix well
8. Garnish with cilantro and serve......
